The Ladies of Roccos
Roccos Tacos is one of our favorite restaurants here in Jupiter, and tonight, it was the place of choice for a dinner with the ladies! With me here all by myself, a much needed girl time was in order, especially since Ellie decided to leave me for Washington (haha). And so, I finally took a shower, did my hair, applied some makeup, and left the house like a normal, functioning adult. These past two days have been a bit rough on me. With Ellie's departure, Adam's away series, and the news of my Dad, I've been sluggish, somber, and extremely tired. And Roccos was just the place to warm me up! They make the freshest guacamole I've ever tasted, and mix it up right in front of your table! Three whole avocados are mashed amongst the perfect blend of seasonings and ripe tomatoes. And their chips? To die for! I snuck a photo of their guacamole station on wheels, just because it's so neat...but I didn't want to make the woman uncomfortable, hence the terrible angle.
Channing, Lara, Amber and I spent a warm and balmy evening under the Florida night sky, with little lanterns swaying in the trees as our backdrop. It's so incredibly beautiful here, and so are my sweet friends. We talked over chicken tacos for three hours, as I got a chance to unwind after a rough couple of days. I always have such a perfect time whenever I'm with them, and I told Ellie tonight that I wish she'd move here just for their friendships! Haha...plus, they even said they'd watch Hunter...so, duh! It's a no brainer, Ellie!
Also, my dad got some results back today. His stroke looks to have, in fact, been a side affect of his chemo drug, Avastin. Also, he learned that the tumor has not grown, which is amazing news...SO, he's going to give his body a break from the Avastin drug for 2-3 months, while the doctors continue monitoring his health. He'll go on a blood thinner for now and I guess we'll see how he's feeling a few months from now! All in all, pretty good news I'd say!
